Bass fishing is one of the most popular types of fishing in America. In addition to the thrill of catching these hard fighting fish, there is also the grand delight of eating these wonderful tasting fish. Here are a few amazing recipes for enjoying these fish.

A Zuc-Bass Casserole is a marvelous way to eat the Bass you catch and the zucchini you grow. Begin by buttering the bottom of a deep casserole dish so nothing will stick. Then cover the bottom with crispy bread croutons. Next slice a zucchini or two into 1/8 inch slices. Using a mandolin is the easiest way to get nice even slices. Cover the croutons with the single layer of zucchini, over lapping them so there will be a piece in every bite. Lightly salt and pepper the top of the zucchini before covering them with a layer of half inch thick bass filets. Cover the filets with a layer of fresh basil leaves. Next cover the basil with slices of fresh mozzarella cheese and grated Romano cheese. Place another layer of zucchini, bass, basil, and mozzarella and grated Romano. Top with a layer of croutons.

Cover with foil and bake at 375° for 40 minutes. Then uncover the casserole and bake for another 20 minutes. Remove from the oven and allow to sit for 10 minutes before slicing and serving. The croutons on the bottom are soft and act like crust; the croutons on top are on crunchy and the flavors in the middle are amazing.

Another great meal is an Italian Bass torte. Begin with a shallow tort pan and spray with non-stick spray. Take a frozen type pie crust and place it on the bottom, pressing it well into the scalloped edges. In a food processor make a pesto by adding fresh basil leaves, 3 cloves of chopped garlic, and a handful of oregano leaves. Puree until blended and chopped well. Add 3 or 4 tbsp. of olive oil, a half cup grated mizithra cheese, and ½ cup roasted pine nuts. Puree until mixed completely. Spread a layer of the freshly made pesto over the bottom of the crust. Place bass filets on top of the pesto close together so that every bite will contain fish. Cover the fish with a layer of sliced tomatoes the same thickness as the fish filets. Cover the tomatoes with a thick layer of grated fontina cheese. Top with the rest of the pesto. Place the tort pan on a baking sheet and bake at 350° for 30 minutes. Remove from oven and allow to sit before slicing and serving.

Fried fish fritters are fabulous treats. In a bowl pour 3 cups of fresh orange juice. Cut bass filets into 1 inch cubes and soak in the orange juice for 45 minutes and drain. In a separate bowl place 2 cups flour, ½ cup sugar, ¼ tsp. salt, 1 tsp. garlic powder, ½ tsp. onion powder, 1 tsp. baking powder, 1 egg beaten, and ¾ cup whole milk. Mix the dry ingredients well and then blend in the egg and the milk. Mix the bass into the flour mixture and add ¼ cup chopped red sweet peppers and ¼ cup chopped green peppers. In a frying pan heat ½ inch of peanut oil to medium high. Using a big spoon scoop 2 or 3 Tbsp. batter and drop into hot oil. Cook until golden brown and turn them over. When done drain on cookie rack and serve.

Churros are a special treat in the South and Central America which were adopted in Spain. They are quick to make and a surefire crowd pleaser. If you plan to do it yourself then enjoy them at their best – freshly made, hot and crispy on the outside. Take this easy donut recipe today.

Churros are tube-shaped unyeasted donuts, thread from a pastry bag with a star tip, fried in oil and wrapped in cinnamon sugar. In South America they are usually filled with something rich like caramel, nutella (hazelnut butter and chocolate), or vanilla custard. Preparation time: 30 minutes

Ingredients:

1 / 2 cup water

1 / 2 cup buttermilk

1 / 2 cup butter

a pinch of salt

1 1 / 4 cups flour

1 teaspoon vanilla

3 large eggs

vegetable oil for frying

1 / 2 cup sugar 1 tablespoon more

1 teaspoon cinnamon

dulce de leche (optional)

nutella (optional)

vanilla pastry cream (optional)

Preparation:

Place butter, water and salt and 1 tablespoon sugar in a saucepan and bring to a boil.

Add flour all at once with a spatula to make it heat resistant. Continue stirring until the mixture groups and form into a ball size. Continue to cook for a minute or two, turning the dough in the pot with a spatula. Remove from heat.

Add vanilla. Add eggs, one at a time, beating well. The mixture should only be glossy and stick to the spatula easily. (Must be a little stiffer than the cream puff mass). If the mixture seems too thick and lacks shine, add an extra egg.

Place dough in a pastry bag fitted with a star tip opening of at least 1 / 2 inch wide. You can also use a round tip.

Place a sheet of waxed paper on a baking tray. Lengths of tube dough (usually to 6.4 inches) long on the cookie sheet.

Place baking sheet in the freezer while you heat the oil. Heat 1.2 inch oil to 375 degrees pan. When churros feels firm, carefully pick them off the baking tray with a spatula and place in the oil. Working in groups, fry the fritters for about 2 minutes each side, until golden brown. Cool on a plate lined with paper towels.

Mix sugar 1 / 2 cup cinnamon together and place the mixture on a plate or in a pan. Roll churros in the cinnamon sugar while still warm. To fill the churros, fit a pastry bag with a round (# 4) metal icing tip. The tip should be small enough to insert at the end of the donut. Fill the pastry bag with your choice filling.

Serve warm.

When my mom was a teenager, she worked in a donut shop. 1 cup confectioners sugar for topping

1. In bowl of stand mixer, combine flour, sugar, baking powder, nutmeg and salt. Add the milk, egg, and melted butter and mix until well blended.

2. Fill a large skillet or medium bank with vegetable oil, about 2 inches deep. Using Fry Thermometer, Heat oil to 375 degrees F. Make sure it stays around that temperature every time you fry the dough.

3. Place cinnamon sugar (mixed together) and filling confectioners sugar in two separate small bowls. Set out a few folded paper towels near the stove for drying the donut hole, as well as cooling rack with parchment paper underneath.

4. When oil is ready, place about 5-6 teaspoons of dough at a time in the oil and fry each side for 1 minute (2 minutes total). Remove from oil and place on paper towel to absorb excess fat. Then, using a fork, roll the donut in any confectioners’ sugar or cinnamon-sugar mixture. Then place on cooling rack to cool before serving, gently warm.

Place the donut halves to the pan and cook over medium heat until lightly browned. Also, place the donut halves on the hot grill over low heat until toasted.
Place patties on a donut halves, top each with two slices of bacon and the remaining half of the donut.

Ingredients

7- Glazed Donut

1.8 – lbs of ground beef (i prefer 85% lean for this recipe)

1o- Slices of Bacon

7- Slices of white cheddar cheese

3 – Roma Tomatoes

2 – stick of butter

salt

pepper

Cook the bacon in the oven on a cookie sheet until brown. (doing it in the oven will keep it flat and it will cook evenly) I cook it at 375 degress.

Divide ground beef into 6 equal portions and form 6 round big patties.

Cook hamburgers to 400 ° pan and continue to press them with a spatula as you cook them. Salt and pepper to taste then divide some of your donuts in halves.

Melt some butter in a skillet and brown your already cut donut halve in the oil. Remove when it gets in a good light brown shade.

Add up a slice of the Roma tomatoes.

Put the patties back to the grill and top with bacon and cheese and cover with lid until cheese is melted.

Top with tomatoes and more cheese between your sliced of donut.

I wanted to take a few minutes to give you a recipe that you can make for dinner than not only has a ton of flavor, but it is also good for you as well. It is called Maple Mustard Pork Chops with a side of Steamed Broccoli.

Here is a list of ingredients for the pork chops:

This makes 2 servings.
1 large Ziploc bag
1 tablespoon of Maple Syrup
1 tablespoon of Dijon Mustard
1 teaspoon of Olive Oil
1 small clove of crushed garlic
2 bone-in pork chops
Salt and pepper to taste

First, you will need to preheat your skillet to medium high. Mix together in a small bowl the olive oil, Dijon mustard, maple syrup, salt, pepper, and garlic. Place the mixture inside the Ziploc bag with the two pork chops and shake to coat the chops. Remove the chops from the bag and place in the skillet; cooking should be about 3 to 4 minutes per side. Pour the remaining mixture onto the chops while they are cooking to add more flavors.

Here is what you need to do for the steamed broccoli:

Break a head of broccoli into bite sized florets. Add about an inch of water to a saucepan and bring to a boil. Then add the florets to the boiling water and cover. Take the heat down to medium. Cook the broccoli for about 6 to 7 minutes or until easy they are easily pierced by a fork. Drain and season with salt and pepper.
